**由於橡木桶發酵處理法的豆子,烘焙後豆相顏色較深此現象是正常的,並不是烘焙太深喔~ 聖荷西莊園(Finca San Jose Estate)是個悠久的莊園,位於哥倫比亞中部的Caldas卡爾達斯省,這幾年在精品咖啡浪潮中一直嘗試找到自己的一條路。聖荷西莊園的男主人除了咖啡園外,還有萊姆酒橡木桶製作及蘭姆酒釀造的工作,有天女主人Monsalve Botero在幫忙填裝蒸餾液準備發酵時突然想到,如果把咖啡生豆放到橡木桶裡發酵,是否能有不一樣的風味產生。因此Monsalve Botero從2013年開始嘗試了以不同陳年長度的哥倫比亞橡木桶進行不一樣發酵時間的釀酒式低溫發酵,終於在今年的批次裡找到了想到的味道,製做出有別於一般傳統的精緻.橡木桶發酵豆。很期待跟大家分享,是一支無酒精成分的咖啡豆,滿滿的酒香氣,熱的時候是咖啡跟萊姆酒香氣,冷掉後更像無酒精的萊姆酒。 哥倫比亞 日曬 蘭姆桶發酵 聖荷西莊園 風味:杯中香氣有奔放濃烈的威士忌香氣, 黑巧克力, 杏仁醬; 深刻的酸甜結構, 威士忌, 帶有紅酒的酸質, 飽滿的糖漿口感, 核果, 酒香巧克力的尾韻, 很特別的體驗 主風味:威士忌, 黑巧克力, 杏仁醬 酸度Acidity : 3分 (酸度由弱至強是1~5分) 烘焙度:中淺焙 -------------------------------------------------------------------------------- 酸度說明: 顧客請我們推薦豆子時, 除了風味, 最常問我們: 這個會酸嗎? 酸度的感受閾值因人而異, 曾經遇過兩位客人, 甲說要喝酸的, 乙說不敢喝酸的 我泡了日曬耶加藍驢子先測試他們, 結果甲說好酸, 乙說還好是可以接受的酸, 顯然酸度的感受度有個別差異 既然酸度感受會有個別差異, 那我們怎麼評準呢? 我們大致上以幾種水果來做從最不酸到最酸的評準, 分別是草莓果醬、葡萄、蘋果、橘子、檸檬, 評分是1~5分, 希望透過這樣的評分, 讓咖啡豆有酸度的相對比較值, 提供消費者在購買上參考. ------------------------------------------------------------------------------------- kakalovecafe小叮嚀: 1.咖啡豆以0.5磅袋包裝,高單價及數量少的咖啡豆以0.25磅袋裝 2.建議養豆天數: 淺焙11-12天、中淺焙9-10天、中焙7-8天、中深焙5-6天、深焙5天 3.咖啡豆養豆後開封30-60天內是最佳賞味期,放置陰涼處可存放三個月 4.KAKALOVE咖啡豆包裝,所使用"單向氣閥包裝袋" 5.貼氣閥主要目的是因為怕運送過程中遭受碰撞擠壓,導致香氣受到影響,收到後即可撕除 Finca San Jose Estate is a long-established estate located in the Caldas province of central Colombia. In recent years, it has been trying to find its way in the wave of fine coffee.
